BLACK BEANS AND BITTER MELON "EL MEXICANO"

Serves: 4-6
Ingredients:

1 Bitter Melon (semi-mature) cored and diced
1 Yellow Onion
3 cups Stewed Tomatoes
2 cups tomato juice
2 cups water
1 cup Yellow Corn
2 cloves garlic (mashed)
3 cups Black Beans (soaked)
1 T chipotle
1 T smoked paprika
1/2 t coriander
1/2 t cumin
1 T sugar
salt to taste
pepper to taste
lime
fresh cilantro

Directions:

Sauté bitter melon, onion and garlic and spices in olive oil. Add mixture to pressure cooker and combine with corn, tomatoes, and black beans. Add tomato juice, sugar and water and cook 1 hour on low heat or until beans are soft and liquid has reduced. Sprinkle salt and pepper to taste. Serve over rice with sliced lime and top with diced cilantro.
