Re-hydrated shitake mushrooms, stems removed and chopped
Bitter Melon, cored and thinly sliced
Grated fresh ginger
Garlic
Hot pepper
Soy sauce
Rice vinegar
Sugar (dash)
Stir fry mushrooms, Bitter Melon, ginger and garlic together, adding spices and a dash of soy sauce, rice vinegar, and sugar to taste. Let mixture cool. Mound on to egg-roll wrappers and wrap, sealing with starch (cornstarch and water mixed to the consistency of glue.) Chill egg rolls.
Heat peanut oil in wok. Drop in chilled egg rolls and fry until golden brown. Remove and serve warm with sauces.
