Tallarin en Salsa Verde con Calabaza China (Linguini in Green Sauce with Fried Bitter Melon)

Ingredients:

1 Bitter Melon
Linguine
Green Sauce:
Spinach, Basil, Olive Oil, Garlic and Parmesan Cheese
2 Eggs beaten
Breadcrumbs
Salt
Pepper

Directions:

Remove the seeds of the Bitter Melon and slice. Dust with wheat flour and bathe in eggs. Coat Bitter Melon slices in breadcrumbs and fry. Sprinkle with salt and pepper.

Cook the linguine, drain and cover in green sauce. Put fried Bitter Melon slices on top and serve.
