4 Bitter Melon (sliced)
2 c. White Vinegar
½ c. Water
2 tsp. Salt
3 tblsp. Sugar
2 tblsp. Turmeric
1 tsp. Black Mustard Seed
3 tblsp. Coriander Seed
3 tblsp. Fennel Seed
2 Cloves Fresh Garlic
Bring vinegar, water, salt, sugar and spices to a boil. Add Bitter Melon slices and boil for 1 minute. Remove, drain and cool.
Pack slices into 2 sterilized quart jars. Add one clove of garlic to each jar. Fill jars with vinegar and spice mixture until liquid reaches ¼ inch from the top. If there is not enough liquid, top off with more white vinegar.
Store in refrigerator 2-3 weeks. Flavors mellow with age.
For Mediterranean wrap, dice Bitter Melon pickles into small cubes and lay on top of wrap of choice. Enjoy!
