Bitter Melon Syrup:
2 Bitter Melons
1 c. Sugar
Juice of 1 Lemon
Cocktail:
2 oz. Gin
1 tsp. Bitter Melon Syrup
Soda Water
Ice
1 Lemon Slice
1 Bitter Melon Slice
For the Syrup:
Seed Bitter Melons and dice into small cubes. Cover in sugar and lemon juice. Stir and let sit overnight.
Blend liquid and Bitter Melon cubes in a blender and squeeze through 2 layers of cheesecloth. Discard pulp.
For the Cocktail:
Pour gin and soda over ice. Add Bitter Melon Syrup and stir. Garnish with 1 Lemon slice and 1 thin slice of Bitter Melon.
